What's for dinner? Miracle Noodles, thats what's for dinner!

It was a simple dinner, fettuccini with meatballs in a tomato mushroom spinach sauce with a little mozzarella cheese and a dollop of sour cream.  I've made it dozens of times.  Except this time it was dairy free, meat free and PASTA free, with no added salt.  I tried ZERO CALORIE Miracle Noodles.  And I'm never going back.

The meal was packed with protein, fiber, micro nutrients and totaled less than 200 calories per serving....  200 calories.  The regular way I made it ran quadruple that (about 800 calories a serving) and was full of sugar/carbs, fat and cholesterol. 

It took about 25 minutes and  I was full and happy after.

Here is the recipe serves 2.  (Pictures of the weird stuff for your convenience)

Bake 8,  meatless meatballs on a cookie sheet at 400 for 15 minutes

In a large covered skillet, throw a can of diced tomatoes, can of sliced mushrooms (a little lemon juice make 'em taste more mushroomy FYI), a cup of frozen spinach, a few diced artichoke hearts, minced garlic, diced peppers (optional).  Set on medium heat and season with onion powder, garlic powder,  Ms Dash and Bragg's liquid amino's.  Cover, bring to a boil, then reduce heat to simmer.

When meatballs done add to skillet, re-cover and continue to simmer.

Prepare the miracle noodles.  Rinse for 20 sec, blanch in boiling water for 1 minute then strain and place on paper towel and pat dry, then add to skillet.  Simmer all together for about 5 minutes.

Split the skillet into two bowls, sprinkle a little bit of mozzarella shreds on top.  Add a dollop of sour cream, dash of hot sauce, sprig of parsley and Voila!

Remember the first taste is with the eyes.


I should have taken a picture but I always forget.  I am usually so hungry by the time it's ready there is no time for pictures.  Next time.
